Fuya

Fuya persimmons (Diospyros kaki) are a popular non-astringent variety known for their sweet, mild flavor and crisp texture when eaten fresh. They have a vibrant orange color and a rounded, squat shape. Unlike astringent persimmons, Diospyros kaki can be enjoyed while still firm, making them versatile for snacking or adding to salads. As they ripen, they become softer and even sweeter.

Chocolate

Chocolate persimmons (Diospyros kaki 'Maru') are an intriguing variety named for the rich, dark brown flesh they develop as they ripen, resembling chocolate in color, though not in flavor. This astringent variety needs to be fully soft and ripe before eating, at which point it offers a sweet, smooth taste with subtle spicy notes. The fruit is medium-sized, with a bright orange skin, and is prized for its unique interior color. Chocolate persimmons are often enjoyed fresh or used in desserts and baked goods, offering a naturally sweet, flavorful addition to many dishes.

Nishimiriwase (Coffee Cake)

Nishimura Wase persimmons (Diospyros kaki 'Nishimura Wase'), also known as Coffee Cake persimmons, are an early-ripening variety with a rich, spicy-sweet flavor reminiscent of coffee cake. This unique cultivar is an astringent type that requires pollination to develop its signature brown flesh and non-astringent taste. When fully ripe, the fruit has a soft texture and is deeply sweet with a hint of spice. The skin is bright orange, and the medium-sized fruit is excellent for fresh eating or adding to desserts. Nishimura Wase persimmons are highly valued for their early harvest and complex flavor.

Fall Hachia

Fall Hachia persimmons (Diospyros kaki 'Hachiya') are a popular astringent variety known for their vibrant orange, acorn-shaped fruit. Unlike non-astringent types, Hachia persimmons must be fully ripe and soft before eating to avoid an intensely astringent taste. When ripe, the fruit has a smooth, custard-like texture and a rich, honey-sweet flavor. Often used in baking, jams, and smoothies, Fall Hachia persimmons are also enjoyed fresh by scooping out the soft flesh with a spoon. They are rich in vitamins A and C, making them a nutritious and delicious autumn fruit.
